Definition : Cacao Arriba
When it comes to chocolate tasting, one of the most widely recognized and appreciated varieties worldwide is undoubtedly Arriba cocoa. Native to Ecuador, this cocoa bean possesses exceptional aromatic qualities that have made its reputation for centuries. But what do we really know about this Ecuadorian treasure? What are its characteristics and why is it so popular with chocolate lovers? Find out all about this unique variety in this article.
The origin of the name "Cacao Arriba
To better understand Arriba cocoa, it's important to look at its name. It actually comes from the Spanish word "arriba", meaning "upstream" or "higher". This name refers to the region where these famous cocoa beans come from. They are grown mainly on the banks of the Guayas River, in the province of Esmeraldas, located upstream from the port city of Guayaquil.
Interestingly, this designation is not linked to any specific botanical variety. In fact, Arriba cocoa can come from different subspecies of cocoa trees. Rather, the designation is used to distinguish these beans from those grown in other regions, because of their distinctive taste characteristics.
Characteristics of Arriba cocoa
Arriba cocoa is renowned for its exceptional aromatic qualities. It is these qualities in particular that enable it to seduce and conquer the palates of chocolate lovers the world over. The beans of this Ecuadorian variety have a refined, flowery taste, moderate bitterness and a certain subtlety.
A delicate floral taste
What sets Arriba cocoa apart from other varieties is its highly distinctive gustative profile. Its delicate, floral flavors make it a unique cocoa bean, equally at home in fine chocolates and desserts. Dominant aromas include notes of jasmine, violet and lavender.
Moderate bitterness
Unlike some more bitter, full-bodied cocoa varieties, Arriba cocoa has a controlled bitterness that doesn't mask the subtle, sweet flavors of the beans. This balanced taste is particularly appreciated by those looking for a chocolate with a less intense mouthfeel, without sacrificing taste quality.
Subtlety that makes all the difference
Arriba cocoa beans are also renowned for their finesse and subtlety. In other words, the aromas developed when tasting them evolve over time, offering a rich, complex taste experience. Floral notes may be complemented by fruity or spicy aromas, depending on the terroir and growing conditions.
Nacional: the prestigious ancestor of Arriba cocoa
Beyond its taste, it's essential to remember that Arriba cocoa has a close link with the Nacional, a variety of cocoa tree endemic to Ecuador. Nacional cocoa has historically been considered one of the best in the world, due in part to its rarity and incomparable taste. Unfortunately, this variety has been in serious decline since the 1900s, as a direct result of a disease of the cocoa tree known as "witches' broom disease".
In order to safeguard and revive production of this exceptional cocoa, efforts have been made to select and reproduce the most disease-resistant Nacional cocoa trees. The results of this work now seem encouraging, as some Ecuadorian producers areonce again offering chocolates made exclusively from Nacional beans. It is important to stress, however, that the majority of current harvests are still made from Arriba cocoa, a direct descendant of the prestigious Nacional.
A fair-trade, local supply chain
In addition to its undeniable gustatory qualities, Arriba cocoa is also produced and valued within a fair-trade, local supply chain. Small Ecuadorian producers are encouraged to form cooperatives, enabling them to benefit from favorable conditions for growing and selling their precious Arriba cocoa beans.
- Implementing sustainable practices: cooperatives generally support the adoption of agro-ecological practices, aimed at preserving the environment and natural resources. These include protecting biodiversity, banning toxic pesticides and diversifying crops.
- Respect for human rights: the Arriba cocoa chain is equally concerned with the social and economic rights of farm workers. The emphasis is on guaranteeing a decent income, respecting decent working standards and refusing child labor.
- Promoting local know-how: Finally, the Arriba cocoa chain seeks to highlight the unique ancestral know-how of Ecuadorian producers, notably through the promotion of Appellations d'Origine Contrôlées (AOC).
So, when you enjoy a chocolate made from Arriba cocoa, these values are also honored, helping to preserve the exceptional quality of this unique bean.
